30-min. Bang Bang Shrimp

Ingredients:

For the shrimp:
- 1 lb large shrimp, peeled and deveined
- 1/2 cup buttermilk
- 1/2 cup cornstarch
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
- Chopped green onions for garnish
For the Bang Bang sauce:
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha (adjust to heat preference)
- 1 tablespoon honey
- 1 teaspoon rice vinegar
Directions:
- In a bowl, soak the shrimp in buttermilk and set aside for 10 minutes.
- In another bowl, combine cornstarch, flour, garlic powder, paprika, salt, and pepper.
- Heat oil in a deep skillet or fryer to 350°F (175°C).
- Remove shrimp from the buttermilk, dredge in the flour mixture, and coat evenly.
- Fry shrimp in batches for 2-3 minutes per side, or until golden and crispy. Drain on paper towels.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.
- Toss the crispy shrimp in the Bang Bang sauce until fully coated.
- Serve immediately, garnished with chopped green onions.
