Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup chocolate frosting (store-bought or homemade)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Stir in the vanilla extract.
  3. Gradually add the flour and salt, mixing until just combined. Be careful not to overmix. Gently fold in the mini chocolate chips.
  4. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  5. Flatten each ball slightly with the bottom of a glass or your hand. Bake for 12-15 minutes, or until the edges are lightly golden.
  6. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  7. Once the cookies are completely cool, spread a generous amount of chocolate frosting on the bottom of one cookie and sandwich it with another cookie.
