These crispy, cheesy egg rolls are a low-carb twist on a classic favorite. Packed with ground beef, melted cheese, and pickles, they’re the ultimate snack or meal idea for keto lovers!


Ingredients:


1 lb ground beef
1 cup shredded cheddar cheese
1/4 cup diced pickles
1 tbsp mustard
1 tbsp sugar-free ketchup
1 tsp garlic powder
1 tsp onion powder
6 low-carb egg roll wraps (or cheese wraps for ultra-low carb)
Avocado oil spray (for air frying)


Instructions:


Prepare Filling:


Brown the ground beef in a skillet over medium heat.
Season with garlic powder, onion powder, salt, and pepper.
Remove from heat and mix in shredded cheddar, diced pickles, mustard, and ketchup.


Assemble Rolls:


Lay out the egg roll wraps (or cheese wraps).
Place 2-3 tbsp of the beef mixture in the center of each wrap.
Fold the sides inward, then roll tightly, sealing the edges with water.


Cook:


Preheat the air fryer to 375°F (190°C).
Spray the rolls lightly with avocado oil.
Cook for 8-10 minutes, flipping halfway, until golden and crispy.
