Savory Potato Pancakes

Ingredients:

4 large potatoes, grated
1 small onion, grated
2 eggs
1/4 cup all-purpose flour
Salt and pepper to taste
1/2 tsp garlic powder (optional)
2 tbsp vegetable oil
Preparation:
Squeeze excess moisture from the grated potatoes and onion.
In a bowl, mix potatoes, onion, eggs, flour, salt, pepper, and garlic powder.
Heat oil in a skillet over medium heat.
Drop spoonfuls of the mixture into the skillet, flattening them into pancakes.
Cook for 3-4 minutes per side, until golden brown and crispy.
