Ingredients:
1 cup cooked pumpkin, mashed
2 large eggs
1/4 cup almond flour
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Cooking oil (for frying).
Instructions:
Prepare the Pumpkin:
If you haven’t already, cook the pumpkin until it’s soft. Once cooked, mash it into a smooth consistency. Let it cool slightly.
Mix Ingredients:
In a mixing bowl, combine the mashed pumpkin, eggs, almond flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Form Fritters:
Heat a skillet or frying pan over medium heat and add enough cooking oil to coat the bottom. Take spoonfuls of the pumpkin mixture and carefully drop them into the skillet, shaping them into small fritters with the back of the spoon. Leave some space between each fritter to allow for easy flipping.
Fry Fritters:
Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy. You may need to adjust the heat to prevent them from burning.
Serve:
Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil. Serve warm and enjoy!
